			<p><strong>COMING SOON</strong></p>
<p><a href="http://www.matthewkenneycuisine.com/plant-food-wine" target="_blank" rel="noreferrer noopener"><strong>Plant Food + Wine and Double Zero Pizzeria:</strong></a> Best known for his seasonal vegan philosophy, Los Angeles-based celebrity chef Matthew Kenney is making his mark on Charm City by bringing two of his plant-based restaurants to the ground floor of the 414 Light Street building downtown. The first will be Plant Food + Wine, a sit-down spot featuring artful vegan dishes like aromatic squash with roasted fennel and kelp noodle cacio e pepe. Double Zero Pizza will neighbor the restaurant, serving up vegan pies topped with cashew mozzarella, eggplant bacon, and farro-fennel sausage. Both concepts, which will <a href="https://www.baltimoremagazine.com/2018/4/23/414-light-street-skyscraper-to-offer-a-variety-of-food-options" target="_blank" rel="noreferrer noopener">join Ramen Utsuke</a> from the owner of Kippo Ramen in the building, will be designed by local firm SM+P Architects and are slated to open this summer.</p>
<p>Stephen Gorn, president and CEO of developer Questar Properties, says that the restaurants are meant to be on brand with what 414 Light Street offers its tenants. “The restaurant component really dovetails into the theme of our building,” Gorn <a href="https://www.baltimoremagazine.com/2018/4/23/414-light-street-skyscraper-to-offer-a-variety-of-food-options">told us</a> last year. “We have a health and wellness program, and a quality concierge that will cater to the living experience of our residents. And food is a big part of that experience.” <em>414 Light St. </em></p>
<p><strong><a href="https://www.motzibread.com/" target="_blank" rel="noreferrer noopener">Motzi Bread:</a> </strong>Be on the lookout for this upcoming bakery from Charles Village locals Maya Muñoz, a Baltimore City school teacher, and Russell Trimmer, a former Woodberry Kitchen baker and farmer at Next Step Produce in Charles County. The owners, who live above their street-level storefront on the corner of Guilford Avenue and East 28th Street, will focus on locally sourced loaves that use freshly milled flour and grains including corn and buckwheat from Migrash Farm in Randallstown. Although the shop isn’t expected to open until the fall, Motzi, which gets its name from the Hebrew blessing over bread, launched a <a href="https://www.motzibread.com/subscribe?fbclid=IwAR297shllR8tz-w5y03yS2-J3CW4__SaubYwpj_Ojtnfzda1XamxFfTedHI" target="_blank" rel="noreferrer noopener">weekly subscription</a> service earlier this week. Featured loaves include a sprouted five-grain, focaccia topped with sunflower oil, and a caraway beer bread made with suds from neighboring brewery Peabody Heights. <em>2801 Guilford Ave. </em></p>
<p><strong><a href="https://www.shakingcrab.com/" target="_blank" rel="noreferrer noopener">Baltimore Seafood:</a> </strong>Crab purists might have a tough time grasping this new concept that is on its way to Canton. Taking inspiration from The Shaking Crab, an East Coast chain with locations spanning from Boston to Brooklyn, the restaurant serves crab and other crustaceans in a plastic bag that diners shake up with signature spices and sauces. (Think crawfish with cajun seasonings and mussels with sweet chili miso.) Set to open in the former La Tolteca space on Boston Street this May, the spot will offer a wide range of oceanic offerings, as well as seafood-boil sides like steamed corn and red potatoes. <em>2324 Boston St. </em></p>
<p><strong>OPEN </strong></p>
<p><strong><a href="https://www.facebook.com/pilliontea/" target="_blank" rel="noreferrer noopener">Pillion Tea:</a></strong> Local tea houses seem to be on the up and up. Emma’s Tea Spot opened to rave reviews in Hamilton last year, Twisted Teahouse is expected to debut in Hampden this spring, and now, Midtown-Belvedere locals have this new shop to turn to when they’re in need of a strong brew. Pillion Tea opened its doors earlier this month, offering local <a href="https://www.baltimoremagazine.com/2018/4/11/owners-of-wight-tea-co-share-new-flavors-and-tips-for-springtime-tea" target="_blank" rel="noreferrer noopener">Wight Tea Co.</a> varieties, craft sodas, and sweet pastries like cherry scones and lemon-strawberry pound cake. Spring specials include a vanilla-mint matcha latte, Ceylon black iced tea with lemon, berry Sencha green tea lemonade, and a house chamomile-strawberry soda. <em>42 W. <p><strong><a href="https://www.instagram.com/greenhousejuicecafe/" target="_blank" rel="noreferrer noopener">Green House Juice Cafe:</a> </strong>Regulars were ecstatic when this Charles Village staple, formerly Grind House Juice Bar, reopened earlier this week. The fuel-up fixture closed for “rejuvenations” in December, but is now back up and running with an updated name and new partner Flourish Baltimore—a holistic lifestyle brand that features organic herbal teas, essential oils, soy candles, and other wares that are handmade by Maryland merchants. Swing by to check out the updated digs, while also grabbing a few self-care products, a blended smoothie, or vegan snacks like the fan-favorite goddess kale salad. <em>2433 St. Paul St. 410-366-2441</em></p>
<p><strong>NEWS</strong></p>
<p><strong><a href="https://theelephantbaltimore.com/" target="_blank" rel="noreferrer noopener">The Elephant:</a> </strong>The past week has been an emotional rollercoaster for fans of this storied spot in Mt. Vernon. After announcing that they were <a href="https://www.baltimoremagazine.com/section/fooddrink/the-elephant-closing-in-mt-vernon-this-weekend" target="_blank" rel="noreferrer noopener">forced to close</a> the restaurant due to ongoing financial struggles, the owners recently decided that they will be able to open on Thursdays, Fridays, and Saturdays throughout the entire month of April. Not ready to give up hope, the team has also launched a <a href="https://www.gofundme.com/axdvbu-save-the-elephant?teamInvite=uMngmcrgvSv24HqGwWfWxs22qH2L2XLmApnHqX9InE1Cq2GAG40DgLtcyVdgxFff" target="_blank" rel="noreferrer noopener">GoFundMe</a> campaign to save the building—a posh, 19th-century mansion complete with Tiffany stained glass, intricate teak woodwork, dangling Waterford crystal, and golden chandeliers. “Today, The Elephant is in jeopardy of closing,” reads a post to the fundraising page. “And the historic architectural elements may soon be ripped out and sold piece-by-piece due to a hostile takeover by one of our initial investors.” In only one day, the page raised $4,500 of its $600,000 goal. <em>924 N. <p><strong><a href="https://www.baltimoremagazine.com/section/fooddrink/clavel-and-chef-cindy-wolf-named-james-beard-semifinalists" target="_blank" rel="noreferrer noopener">James Beard Finalists Announced:</a> </strong>Earlier this week, the James Beard Foundation narrowed down its list of semifinalists to determine which national names would be honored as nominees at the esteemed awards gala in Chicago on May 6. For the eighth time, chef Cindy Wolf of Charleston in Harbor East has been named a finalist in the Best Chef Mid-Atlantic category. Although the bar team from Clavel in Remington was <a href="https://www.baltimoremagazine.com/section/fooddrink/clavel-and-chef-cindy-wolf-named-james-beard-semifinalists" target="_blank" rel="noreferrer noopener">named a semifinalist</a> for Outstanding Bar Program this year, they unfortunately didn’t make the cut for the final round. After 12 nominations total (eight being finalists nods), chef Wolf has yet to bring home the medal. As always, we’re crossing our fingers that this is her year.</p>
<p>“I am so honored, happy, and excited to be nominated again,” Wolf said in a statement. “There is so much inspiration in this world of ours. I just want to keep absorbing it, to keep learning and moving forward. But in the end, the best food is made with love and care.”</p>
<p><strong><a href="https://sagamorespirit.com/" target="_blank" rel="noreferrer noopener">Sagamore Whiskey Wins Best Rye:</a></strong> Speaking of national acclaim, Sagamore Spirit’s Port Finish whiskey recently won the Double Gold medal and the distinction of Best Rye Whiskey at the prestigious San Francisco World Spirits Competition. The award is a huge win for the local distilling community, especially after Sagamore’s Cask Strength Rye won a Double Gold in 2017 and Baltimore Spirits Company’s Epoch Rye took home the prize last year. All of the acclaim goes to show that Baltimore is officially back on the map as a whiskey-distilling powerhouse.</p>
<p><strong>EPICUREAN EVENTS </strong></p>
<p><strong>3/29: </strong><strong><a href="https://www.facebook.com/events/2518569508213704/?active_tab=about" target="_blank" rel="noreferrer noopener">Anatomy of a Chicken Box Part Two</a><br /></strong>Two years ago, crowds formed lines around the block for part one of this epic mashup between Ekiben and Blacksauce Kitchen at the old Union Craft Brewing space. Now, in celebration of Ekiben’s third birthday, the crews are teaming up to do it all over again. For part two, everything is expected to be bigger and better. Head to Union’s massive Medfield digs to enjoy live music, cold beers, and, of course, a next-level menu from Ekiben and Blacksauce. Although details are typically under wraps until the day of, it’s safe to say that the drool-worthy dishes will pay homage to the iconic Baltimore chicken box. <em>1700 W. 41st St. 4-10 p.m.</em></p>
<p><strong>3/29-30: </strong><strong><a href="http://www.beerandbourbon.com/timonium-md/show" target="_blank" rel="noreferrer noopener">Beer, Bourbon &amp; Barbecue Festival</a><br /></strong>For the 13th year, this all-out smoke show is returning to the Maryland State Fairgrounds with—you guessed it—more than 60 beers, 40 bourbons, and lots of fingerlickin’ fare. While strolling around the festival, keep your eyes peeled for local brands including Monument City Brewing, Raven Beer, Sagamore Spirit, HarborQue, and Char’d Barbecue. Throughout the weekend, there will also be special events such as bourbon bingo, distilling seminars, and a jam-packed live music lineup. <em>2200 York Rd. $40-125</em></p>

			<p><strong>COMING SOON</strong></p>
<p><strong><a href="https://bpmarkets.com/markets/broadway-market/" target="_blank" rel="noreferrer noopener">Broadway Market:</a></strong> Earlier this week, Mayor Catherine Pugh announced six stalls that will be setting up shop inside the renovated Broadway Market in Fells Point this winter. Slated to debut in February, the north shed of the redesigned public market will house local icon Connie’s Chicken &amp; Waffles, farmers’ market favorite Thai Street, social justice-driven ice cream purveyor Taharka Bros., Hampden-based Indian eatery The Verandah, and Old Boy—an <a href="https://www.baltimoremagazine.com/2018/11/7/renovated-broadway-market-bringing-diverse-food-stalls-to-fells-point" target="_blank" rel="noreferrer noopener">authentic Korean concept</a> from Phil Han of Dooby’s. Han will also operate the market’s centerpiece bar, which will feature an elevated coffee program and brunch menu during the day, and draft beer and cocktails in the evening.</p>
<p>Returning to the revamped space will be longtime vendors Sal’s Seafood, Vikki’s Fells Point Deli, and Sophia’s Place, the European cafe and bakery that first opened in the market in 1986. There is still one stall that has yet to be leased. Once the north shed reopens, construction will begin on the south shed, which will house collaborative seafood spot <a href="https://www.baltimoremagazine.com/2018/4/3/atlas-owners-connection-to-broadway-market-comes-full-circle-with-new-crab-house-the-choptank" target="_blank" rel="noreferrer noopener">The Choptank</a> from Atlas Restaurant Group and Captain James Landing. <em>1640 Aliceanna St. </em></p>
<p><strong><a href="https://www.theshopsatkenilworth.com/" target="_blank" rel="noreferrer noopener">Lyfe Cafe:</a> </strong>Be on the lookout for this new dining destination at The Shops at Kenilworth while checking out the mall’s beloved holiday train garden this season. Expected to open in early 2019 (just in time to get started on those New Year’s resolutions), the healthful spot from local owner Penny Seabolt will feature an all-day menu prepared with ingredients that promote physical and mental wellness (think protein pancakes and waffles, a kale detox salad with lemon-tahini dressing, smoothie bowls, and wellness shots). The eatery is designed to accommodate every major diet—including low-calorie, gluten-free, dairy-free, vegan, and vegetarian—and will also offer meal prep services. The 1,788-square-foot cafe will be located next to Wilkes &amp; Riley on the ground level of the recently-renovated Towson shopping plaza. <em>800 Kenilworth Drive, Towson</em></p>

<p><strong><a href="http://clarksvillecommons.com/shops-dining/" target="_blank" rel="noreferrer noopener">The Common Kitchen:</a></strong> The food hall trend—which has taken off in Baltimore with spots like R. House, Mount Vernon Marketplace, and the upcoming Whitehall Mill—has now spread to Clarksville with this new communal space that will house 11 artisan makers. A <a href="https://www.facebook.com/events/483931945430567/" target="_blank" rel="noreferrer noopener">grand opening celebration</a> is scheduled for this Saturday, November 10, where local schools will perform live music and vendors like Scoop &amp; Paddle ice cream and Indian street food shop Namaste Foodie will offer opening day specials. Located near Food Plenty inside the environmentally sustainable Clarksville Commons, the gathering space will mark the first food hall in all of Howard County. Other stalls to look out for include Egyptian eatery Koshary by Misteka, bubble tea purveyor Royaltea, barbecue joint Smokin’ on the Bayou, and <a href="https://trifectobar.com/" target="_blank" rel="noreferrer noopener">Trifecto</a>—a coffee and juice bar specializing in Ceremony Coffee drinks and colorful acai bowls. <em>12240 Clarksville Pike, Clarksville. 301-854-2090</em></p>
<p><strong><a href="https://www.patsselect.com/maryland" target="_blank" rel="noreferrer noopener">Pat’s Select Pizza and Asian Garden:</a> </strong>These new BYOB restaurants are opening next door to one another at the Crestridge Center in Cockeysville this month. The eateries are expected to be popular lunch destinations in the development, which features two office buildings and one retail property. Pat’s, a fast-casual pizza chain that is now open, features its signature brick-oven pies alongside flatbreads, burgers, salads, and a lengthy list of pasta dishes. Slated to debut next week, <a href="http://www.asiangardensushi.com/" target="_blank" rel="noreferrer noopener">Asian Garden</a> will highlight Chinese, Japanese, and Thai staples ranging from sushi to bowls of lo mein and pad thai. <em>10151-10155 York Road, Cockeysville</em></p>
<p><strong>EPICUREAN EVENTS</strong></p>
<p><strong>11/12: </strong><strong><em><a href="https://www.facebook.com/events/291995104744872/"><strong>Sweat: Our World, Your Stage<br /></strong></a></em></strong>Everyman Theatre is known for bridging the gap between the food and theater world. The downtown showhouse is continuing that creativity with a Veteran’s Day event at Checkerspot Brewing that ties into the themes of Everyman’s current production, <em><a href="http://everymantheatre.org/sweat" target="_blank" rel="noreferrer noopener">Sweat</a></em>—a slice-of-life drama about steel mill workers facing a plant shutdown who routinely gather at their neighborhood bar. Make your way to the South Baltimore brewery to sip craft beers while watching scenes from the play, and listening in on a conversation comparing the themes in the script to the current hardships facing our own neighbors. Ten percent of all ticket proceeds will benefit South Baltimore-based nonprofit The Baltimore Station, which works to support homeless veterans and reintegrate them into the workforce. <em>1399 S. <p><strong><strong>11/16: </strong><a href="https://www.facebook.com/events/307123373462684/?active_tab=about" target="_blank" rel="noreferrer noopener">Intercostal Breakdown</a></strong><br />Fittingly named after the anatomical term that means “situated between the ribs,” this one-night-only barbecue pop-up, hosted by food writer Amy Langrehr of Charm City Cook, will feature smoked ribs cooked on custom-built cages and grills. Head to Monument City Brewing in Highlandtown to sample meats prepared by chef Patrick Morrow of South Point and chef Damian Mosley of Blacksauce Kitchen. The evening will also feature $5 Monument City beers all night, and Annapolis-based folk rockers Ampersand Stringband playing live from 7:30-9:30 p.m. <em>1 N. Haven St. Free. 5-10 p.m.</em></p>

<p>For one day only, all of our favorite Maryland brewers (and even some who are not yet known to the public) will gather together for a Saturday festival in Frederick that features more than 180 local craft beers. Rain or shine, you can expect staples like The Brewer’s Art, Evolution Brewing, Flying Dog, and Heavy Seas, with sneak previews from soon-to-open newcomers like Barnwerk Farm Brewery and Frederick’s own Midnight Run Brewing. There will also be live music, crafts, and grub from local eateries to go along with all those suds. </p>

<p>It’s been six years since Boone Street Farm opened in the East Baltimore neighborhood of Midway. Left vacant for two decades after the demolition of decaying rowhomes, the quart-acre space was transformed from an empty lot into a community garden equipped with a hoop house, small fruit orchard, and market farm. Growing everything from kale and tomatoes to summer squash and black-eyed peas, the farm offers healthy food options, clean neighborhood initiatives, monthly gardening series, and cooking workshops, for starters. This Friday, celebrate their good work with a warehouse party featuring beloved Baltimore acts like Bond St. District (Unkle Lulu for life!), <a href="http://www.baltimoremagazine.net/2015/7/29/music-reviews-july-2015">Blacksage</a>, <a href="http://www.baltimoremagazine.net/2016/3/25/11-must-see-events-at-light-city-baltimore">Moss of Aura</a>, Halloween Tres, and local DJs, plus food and drink. Proceeds from the show will support Boone Street’s educational efforts, including a Baltimore City Youthworks summer program, Cecil Elementary School garden club, and internships.

										<content:encoded><![CDATA[<p>“When the gallery lights go down, the party lights come up.”</p>
<p>That’s how the Baltimore Museum of Art is billing its latest series of events, Art After Hours, which features a lively night of activities based around the museum’s collection.</p>
<p>It’s all focused on getting younger people who work during the day—and through most of the hours that the museum is open—into the museum’s galleries, says Suse Cairns, director of audience experience. </p>
<p>Those young professionals “don’t always think of the museum as a social experience, like those of us who see it during the day do,” Cairns says. She’s hoping Art After Hours will help to change that. </p>
<p>The first, which is next Friday, Jan. 15 at 7 p.m., is shaping up to be quite the party, all based on the Imagining Home exhibit, which brings up themes of comfort and nostalgia. You can help build a giant pillow fort, mix your own spice rub, dance to the Cajun-infused music of <a target="_blank" href="https://www.facebook.com/thecrawdaddies/" rel="noopener noreferrer">The Crawdaddies</a>, nosh on Blacksauce Kitchen homestyle eats, grab a Waverly Brewing Company cold one—and then stroll through the BMA’s galleries and Imagining Home, which is itself <a target="_blank" href="http://www.baltimoremagazine.net/2015/10/21/new-bma-exhibit-explores-concept-of-home" rel="noopener noreferrer">a feast for the senses</a>.</p>
<p>Other museums throughout the country have started hosting similar nighttime events—the <a target="_blank" href="http://www.guggenheim.org/new-york/calendar-and-events/series/art-after-dark" rel="noopener noreferrer">Guggenheim</a> in New York, for example—and the BMA has already planned two others in March and May. Cairns says the museum is still deciding on what parts of the collection to highlight and which businesses to partner with, but she emphasized that the community tie is key—even the materials from the pillow fort will be donated to local homeless shelters after the event. </p>
<p>And if you’re thinking about attending, you might want to <a target="_blank" href="http://artbma.tix.com/Event.aspx?EventCode=823439" rel="noopener noreferrer">purchase tickets</a> quickly. The BMA has 500 for the event, Cairns says, and they’re going quickly.</p>

Taking over the former Red Parrot Asian Bistro space, Colette will feature a polished interior complete with a granite bar and black wood chair rails. The 80-seat space will emphasize French comfort cuisine with dishes crafted by executive chef Stefano Porcile, whose previous stints include working at local hotspots like Fork &#038; Wrench and Woodberry Kitchen. <i>1709 N. <p><a target="_blank" href="http://bmorekitchen.com/" rel="noopener noreferrer"><strong>B-More Kitchen:</strong></a> This yet-to-open incubator will house more than 50 local food startups <a target="_blank" href="http://www.baltimoremagazine.net/2015/12/10/new-food-incubator-to-open-in-govans-this-spring" rel="noopener noreferrer">upon its reveal</a> in Govans this spring. The communal food hub from co-founders Eben Altmann and Jonathan Fishman will feature a 10,000 square-foot commercial kitchen, its own bakery, a wealth of shared cooking supplies, plenty of storage, and an upstairs catering venue. Slated to open in April 2016, the space will allow its members 24/7 access to all of the amenities in order to mass-produce their gourmet goods. <i>5604 York Road</i>

<p><a target="_blank" href="http://www.blacksaucekitchen.com" rel="noopener noreferrer"><strong>Blacksauce Kitchen:</strong></a><strong> </strong>Known for his claim-to-fame barbecue biscuits, chef <a target="_blank" href="http://www.baltimoremagazine.net/2015/9/1/damian-mosley-and-linwood-dame" rel="noopener noreferrer">Damian Mosley</a> has been making his mark on the local farmers’ market scene for years, and soon, his barbecue brainchild will settle in its first brick-and-mortar space. Blacksauce Kitchen will set up shop in the former home of Sterling’s Crab and Oyster House in Remington, using the kitchen to continue production for farmers’ markets and catering. <p><a target="_blank" href="http://lacakerie.com" rel="noopener noreferrer"><strong>La Cakerie:</strong></a><strong> </strong>Jason Hisley, owner of La Cakerie and a previous <i>Cupcake Wars </i>champion, is bringing his creative confections to Hampden in 2016. La Cakerie currently operates locations in Towson and Mt. Vernon, and this winter it will expand with a new spot on The Avenue. The shop will feature the bakery’s signature morning pastries, an assortment of donuts and muffins, coffee and espresso, and, of course, plenty of elegant cupcakes with flavors ranging from red velvet to raspberry limeade. <i>1027 W. 36th St. </i>

<p><a href="http://www.mothersgrille.com/federal-hill/menu/"><strong>Mother’s Grille:</strong></a><strong> </strong>This Federal Hill fixture is <a target="_blank" href="http://www.baltimoremagazine.net/2015/12/11/mothers-grille-to-expand-into-timonium-in-february" rel="noopener noreferrer">expanding into Baltimore County</a> this winter with a new location off of Padonia Road. The 195-seat space, which was formerly an Applebee’s, will boast a renovated interior with open ceilings, reclaimed wood, and a 65-seat bar. While the restaurant will be a bit more family-inclusive than the Federal Hill flagship, Mother’s signature pub menu full of hefty burgers and sandwiches will carry over in the new space. <i>2450 Broad Ave., Timonium</i>

<p><a target="_blank" href="http://www.yardhouse.com/home" rel="noopener noreferrer"><strong>Yard House:</strong></a><strong> </strong>Pending liquor board transfer approval, this California-based restaurant chain plans to move into Harborplace in the coming months. Yard House, which operates more than 20 locations nationwide, hopes to settle in the former home of longtime Light Street Pavilion tenant J. Paul’s Restaurant. The pub emphasizes 100 brews on tap and an expansive menu with offerings ranging from sushi to grilled Korean pork belly street tacos. <i>301 Light St. </i>

</p>
<p><a target="_blank" href="http://www.doughertyspub.com/" rel="noopener noreferrer"><strong>Dougherty’s Pub:</strong></a><strong> </strong>After 33 years in business, this Chase Street pub is <a target="_blank" href="http://www.baltimoremagazine.net/2015/12/10/doughertys-pub-to-close-this-month" rel="noopener noreferrer">closing its doors</a>. Husband and wife owners Bill and Sherry Dougherty are expecting a packed house this weekend, as the bar’s last night will be December 19. Known for its handmade copper-top bar, pool tables, and plethora of pub snacks, the haunt will soon see a completely different aesthetic under new ownership. No word yet on the name of the new space, but Sherry confirms that Dougherty’s has been sold to a MICA grad who plans to reveal a more modern concept in 2016. <i>223 W. Rumor has it that the space, situated inside the historic Old Chesapeake Hotel, will be revamped into a seafood restaurant in the coming months.     L</span>inwood Dame, owner/chef of Linwoods is a fine-dining fixture in Owings Mills, while Damian Mosley, owner/chef of Blacksauce Kitchen, is making a name for
    himself with catering work and handmade biscuit sandwiches sold at the Baltimore Farmers’ Market and local festivals. Though they’d never met, the duo hit
    it off at a May 18 dinner over a bowl of shrimp and grits (for Damian) and goat-cheese ravioli in brown butter with asparagus (for Linwood) at Linwoods.
</p>
<p>
    <strong>Linwood Dame:</strong>
    Were you out there under the bridge [at the Baltimore Farmers’ Market] yesterday?
</p>
<p>
    <strong>Damian Mosley:</strong>
    We were.
</p>
<p>
    <strong>LD:</strong>
    We were going to try to get down there under I-83 to eat some biscuits. I didn’t realize that you’re out there so early in the morning. How many people
    come down there at a time?
</p>
<p>
    <strong>DM:</strong>
    On a normal Sunday, we probably serve four to five hundred. We probably make about 600 biscuits every Sunday. We start at two in the morning.
</p>
<p>
    <strong>LD:</strong>
    You start baking biscuits at <em>two</em> in the morning? Being in the restaurant business, you don’t realize that a business like that does those kinds of
    numbers on a Sunday morning at the farmers’ market.
</p>
<p>
    <strong>DM:</strong>
    The toughest thing for a small squad like us is that we catered an event on Saturday night.
</p>
<p>
    <strong>LD:</strong>
    So you turn around and you’re back at it again after a few hours of sleep. You do that all the way through October?
</p>
<p>
    <strong>DM:</strong>
    All the way through December.
</p>
<p>
    <strong>LD:</strong>
    Are you from Baltimore?
</p>
<p>
    <strong>DM:</strong>
    I grew up in Virginia.
</p>
<p>
    <strong>LD:</strong>
    I grew up in the South, but I’ve lived in New Jersey, Tallahassee, Atlanta, North Carolina, Virginia, and Chicago.
</p>
<p>
    <strong>DM:</strong>
    How long have you been in Baltimore?
</p>
<p>
    <strong>LD:</strong>
    We’ve been here 27 years. I had a restaurant and catering business in Richmond. That’s how [my wife] Ellen and I met. We were thinking about going to D.C.,
    but it was ’86 or ’87 at the time and we realized that Baltimore didn’t have anything. There was Tio Pepe, The Prime Rib, Danny’s, and a lot of old-school
    restaurants, but that was a period when things were starting to change in this country. At the same time, open kitchens were very, very new.
</p>
<p>
    <strong>DM:</strong>
    What made you decide you wanted an open kitchen then?
</p>
<p>
    <strong>LD:</strong>
    They were very popular and they were opening them in California. I got the idea from there. It was all about French food back then. In the late ’70s,
    things really started to change. American cuisine really started to take over.
</p>

    <strong>DM:</strong>
The momentum changes so much in terms of a particular kind of cuisine or style of cooking. To have one establishment stay open for that long seems    <em>incredible</em> to me.
</p>
<p>
    <strong>LD:</strong>
    One of the challenges is having to go along with the changes. Food has gotten so much better in this country. We’re better educated; we care more. The
    people who work for me today are so different than the people who worked for me 20 years ago. When I got into this business, there wasn’t a lot of respect
    for servers, there wasn’t a lot of respect for chefs, and it’s really changed. So, how did you get into this?
</p>
<p>
    <strong>DM:</strong>
    My parents are from Mississippi. My maternal grandmother lived on a farm and baked cakes for a couple of local businesses. In 1969, my father started
    working for the USDA. He was inspecting meat for food-stamp programs. My mom was working for the McDonald’s Corporation. She worked at Hamburger University
    in Chicago and then, when we moved to Virginia, she worked in their franchising department. I don’t think I realized how closely connected my parents were
    to food when I was growing up. My first summer in college, I went to work for a law firm in D.C. I went back to school and started working in a restaurant
    in North Carolina. I did a little bit of cooking and prep.
</p>
<p>
    <strong>LD:</strong>
    So that was it?
</p>
<p>
    <strong>DM:</strong>
    I just remember how much it felt like a family to work there. When I came out of school and did a couple of stints in law firms, it didn’t seem like I was
    doing anything unique or valuable. I always loved writing, so I moved to Philadelphia to try freelance writing, but I also enrolled at cooking school. My
    very first semester, it was like magic.
</p>
<p>
    <strong>LD:</strong>
    Why biscuits?
</p>
<p>
    <strong>DM:</strong>
    I ended up going to grad school at New York University to study what then was a one-of-a-kind food studies program where we talked about food history, food
    systems, food and culture, food and race. I started teaching a class at a community college in Brooklyn—those students had different needs. Many had worked
    the previous night. If what I was talking about wasn’t interesting, they weren’t going to stay awake. I would bake biscuits for the class. I had students
    from Poland and Russia and Jamaica, but they all loved to eat biscuits. Years later, in Baltimore, I realized that biscuits were an everyman’s food. If I
    was going to make one thing, it was going to be biscuits, so I took them to the farmers’ markets and people loved them. I also think I chose them as a
    little bit of a nod to Mississippi—my mom made biscuits in my house when I was growing up, and when she was growing up, she made biscuits every day.
</p>
<p>
    <strong>LD:</strong>
    When I was growing up, our family never went out to dinner—there were just too many kids. We had dinner at home, and most times we had someone else at the
    table—friends of our brothers and sisters. Food would be lined up—roasted chickens, mashed potatoes, green beans. We were always around a lot of food. . .
    . How do you create?
</p>
<p>
    <strong>DM:</strong>
    I don’t always think about the process, because it feels very natural to me.
</p>
<p>
    <strong>LD:</strong>
    Every Friday we have a chef’s meeting and it’s also a tasting meeting. Is it sweet? Is it salty? Is it crunchy? It is sour? I’m driving to work in the
    morning and that’s what I’m thinking about. It’s a very emotional business in that regard. If you have a passion for it, it’s not just a job.
</p>

	I don&#8217;t know about you but I&#8217;ll take a whole pig roasting on an open fire over chestnuts any day. This weekend, <a href="http://www.blacksaucekitchen.com" target="_blank" rel="noopener noreferrer">Blacksauce Kitchen</a>, maker of the most ridiculously delicious biscuit breakfast sandwiches, is joining forces with Artifact Coffee, Woodberry Kitchen&#8217;s hipster Hampden sister restaurant, for a four-course pig-centric supper. The dishes will highlight different parts of the pig and there will be beer pairings and craft cocktails to go with each. Think espresso-rubbed spareribs with Union Craft wheat beer, trotter fried rice with fried okra pickles and Victory IPA, pork jowl buns with Belgian ale, and pork fat brownies with chocolate-coffee stout.

<p class="MsoNormal">The event will feature a live acoustic set&nbsp;from&nbsp;<a href="http://www.jordanaugust.com/" target="_blank" rel="noopener noreferrer">Jordan August</a> and an art installation by taproom manager&nbsp;<a href="http://attenborough-naftel.blogspot.com/" target="_blank" rel="noopener noreferrer">Chris Attenborough and Sean Naftel</a>. Not all the art is staying at the brewery, though. One lucky guest<br />
will leave with a vintage Winnebago RV customized by the artists, for the cost<br />
