While we know some don’t relish the idea of setting the clocks ahead an hour, we’re excited for another sign of spring’s return: the stacks of rosé proliferating at local wine shops. The fresh bounty of last year’s harvest is arriving, and we can’t wait to have a glass outside on the patio. Here are three suggestions coming soon to a wine shop near you.

California Zinfandel specialist Carol Shelton diverts some of the juice from her initial red wine ferments to this wine, meant to be a catalyst for convivial gatherings and good conversations. This wine is not trying to pose as anything other than a full-throated expression of some very flavorful grape varieties—Zinfandel, Carignan, and Cabernet Sauvignon. Light cranberry hues attest to its broad-shouldered nature, as it offers up bright strawberry, pomegranate, and citrus tones. It’s delicious on its own, and even better with light cheeses and snacks.

Like all Bandol Rosé, Mas Redonne’s offering is mostly Mourvèdre and is typically salmon in color. It’s a sleek wine with pink grapefruit and hints of white peach and minerals. A slightly saline tone on the finish attests to the area’s proximity to the Mediterranean Sea. It’s truly delightful as an aperitif and pairs well with seafood.

THINK PINK: Some rosé production is a byproduct of red wine making; a percentage of juice is bled off after the fruit is crushed but not before it picks up color from the red grape skins that make it pink.

Marques de Caceres Rioja Rosado 2021

The Spanish region of Rioja is famous for its red wines—dry, finely structured wines that range from young and fruity to generously oaked. The Tempranillo grape dominates, so it’s no surprise that this rosado (Spanish for rosé) is made almost entirely from it. The result is a limpid wine with delightful strawberry notes and a clean finish. It’s the perfect way to kick off a night of tapas or simply as a patio sipper at the end of the day. If you’re planning to serve it with food, be mindful of its relatively light body and stick to cheeses, grilled shrimp, and other delicate fare.

What draws people to community gardens? For some, it’s the sense of accomplishment and thrill that comes from harvesting their own fruits, flowers, and vegetables. For others, it’s the simple therapeutic pleasure of creating and caring for beautiful, outdoor spaces.

For Naomi Goldstick Rosner, it was the chance to meet neighbors that sparked her interest in carving out a vegetable garden in the backyard of her Mount Washington home about 10 years ago.

“I posted on Listserv that I had a lot of space in my yard, and if anybody wanted to do vegetable gardening with me, I’d be happy to,” says Goldstick Rosner, who, along with her husband, had recently moved to the Victorian-era neighborhood from Houston, Texas.

When more than 20 interested neighbors responded to her post, she sought the advice of Baltimore Green Space’s founder and then-director Miriam Avins, who advised Goldstick Rosner to contact Master Gardener Larry Kloze. It didn’t go to plan.

“He looked at my plot and said, ‘It’s too small, and it doesn’t get enough sun. You need to go find more land,’” she recalls with a laugh—so she found it in Mount Washington’s Northwest Park. In 2011, the 4.9- acre parcel became home to the Eric Waller Community Vegetable Garden, named after a late neighbor who was an avid gardener and beekeeper.
Nearly a decade later, Goldstick Rosner’s most-loved aspect of the communal garden she founded with Kloze remains its members.

“The fun and amazing part to me is coming together with people who I wouldn’t have otherwise met,” she says. “We work well together.” Of course, it’s also a good way to connect with neighbors while social distancing—as long as your plots are more than six feet apart.

With more than 300 community spaces throughout Charm City, those looking to put down roots at a neighborhood patch have plenty of options to choose from.

“Community gardens are popping up all the time, especially in Baltimore,” says Marcus Jerome Williams, the head of University of Maryland’s Master Gardener Extension Program. The challenge, he says, is finding out where they are—and how to reach the organizers.

“For some community gardens, the leadership changes quite rapidly,” Williams says, and leadership contact information isn’t always available to the public.

But when it comes to connecting with the right people, as well as learning what to plant—and how to plant it—there are plenty of organizations throughout the city to help guide prospective gardeners.

“The University of Maryland, Parks and People, The Orchard Project, Tree Baltimore—all of those places can provide you with support,” says Katie Lautar, executive director of Baltimore Green Space, who also shared some tips for those looking to start their own community gardens.

“If you don’t already know what lot you want, connect with the Adopt-a-Lot program and give Baltimore Green Space a call,” she says. “If you know what lot you want to work on, it’s about finding out who the owner is and getting permission to be on the land.”

Next to ensuring that a space has adequate sun and a reliable water source, Lautar says her best piece of advice for gardeners is to “start with what you have and keep going.”

“Miriam, our founder, always used to say, ‘You don’t build the house all at once,’” she recalls. “If you needed every single piece to put the house together, you might not start.”
To that end, Williams, who first started gardening three decades ago on his family’s eight acres in Suffolk, Virginia, advises new gardeners that it’s okay to fail.

“If it doesn’t work the first time, it’s fine,” he says. “It’ll work next season.”

Spring is finally here—meaning the birds are chirping, flowers are blooming, and we finally have an excuse to leave the house on the weekend to hit the farmers’ market. Farmers’ markets are the best way to scope out local, in-season produce and are a great perfect opportunity to meet your local farmers, ask what produce they recommend, and get fresh ideas on how to use it.

The warmer months of spring give us bright, delicious seasonal vegetables, which help liven up any salad or veggie dish. Great in-season spring vegetables to keep an eye out for include arugula, peas, carrots, spinach, artichoke, and asparagus.

Try to grab a variety of root veggies since they can be enjoyed several different ways. They offer a delightful crunch when raw, or are hearty and comforting when roasted.

Delicious spring root vegetables include beets, radishes, sweet potatoes, fennel and carrots. When raw, beets and carrots are a wonderful crunchy addition to any crudité platter, but they can also be enjoyed roasted or grilled. Similarly, fennel gives a fresh bite when added to salads, and adds a unique flavor when pureed into soups. The beauty of root veggies is that there are several ways to prepare them.

This salad recipe is a great way to incorporate all of your farmers’ market finds. It also presents beautifully, which will make you the talk of any dinner party. Thanks to the bright colors of the veggies, it seems to look stunning no matter what. Next time you hit the local market, be sure to snag these ingredients to make a tasty spring salad.

Ingredients

For the salad:

1 fennel bulb

1 red beet

1 zucchini

1 green apple

1 large sweet potato (either orange or purple)

2 cups of arugula

½ ripe avocado

2 sprigs of mint

Goat cheese (optional)

For the dressing:

Juice from 1 large lemon

2 tablespoons extra virgin olive oil

1 teaspoon Dijon mustard

½ teaspoon honey or maple syrup

½ teaspoon dried basil

¼ teaspoon onion powder

¼ teaspoon salt

Instructions

For the dressing:

In a bowl, add lemon juice, extra virgin olive oil, Dijon mustard, honey, dried basil, onion powder and salt. Whisk vigorously for one minute until all ingredients are fully incorporated.

For the salad:

Preheat your oven to 400 degrees Fahrenheit. Spiralize or cube the sweet potato and add the pieces to a baking sheet. No need to add oil or seasoning to the potato. Once the oven has come to temperature, bake the sweet potato cubes or strands for 10 to 15 minutes until fork-tender. Allow them to cool to room temperature before serving.

Using a mandolin or sharp knife, thinly slice the fennel bulb, apple and beet. Be sure to set the beets away from the other ingredients to avoid color transfer.

Using a vegetable peeler, slowly run the peeler down the long side of the zucchini. Peel thin zucchini ribbons on each side until you reach the seeds. Stop peeling once you can see the seeds.

Slice the avocado into thin wedges.

On a large plate, assemble your salad starting with a bed of arugula. Arrange the other vegetables to your liking. Drizzle dressing on the salad at time of serving. Garnish with fresh mint, fennel greens and optional goat cheese.

Spring is finally making its debut in Baltimore—with flowery buds blooming on trees and neighbors venturing out to sit on their stoops. With that also comes fresh area produce and the use of herbaceous and fruity local ingredients on cocktail menus around town.

“A lot of what we do with cocktails here is fun and quirky anyway,” says Jake Lefenfeld, co-owner of Minnow in Riverside. “But spring is that great time to get locally sourced carrots and beautiful fruits like huckleberries.”

Minnow’s new spring cocktail menu, which launches on Monday, include drinks on the entire color spectrum including Through the Looking Glass, a gin martini with lychee pearls infused with a bright, naturally blue butterfly pea extract.

“We were lucky enough to work in the McCormick science lab to test what products we could infuse that would still hold up their forms,” Lefenfeld says. “You’ve got to fail at eight different things before you get it to work. My goal was to use something natural to achieve a beautiful color.”

“We’re finally getting the fresh things that are locally produced,” says R. Bar manager Amie Ward. “You’re looking at more greenery and herbs; berries start to get on the radar. Any opportunity I have to sneak in carrot juice or snap peas into cocktails, I’ll take it.”

One way Ward’s staff is sneaking in those vegetables in is through the Suspicious Scotty Barnhill (based off a character in Serial Mom), which uses Barr Hill Gin, Mastiha Greek Liqueur, carrot juice from R. House’s Stall 11, and Shrub District Celery.

“At first, you wouldn’t think all those ingredients would pair well together except if you were a health nut,” Ward says. “But it’s delicious! People say it’s a great Bloody Mary substitute.”

An ode to Female Trouble, the Trouble Maker cocktail also uses stall ingredients—in this case, matcha tea, from Ground & Griddled—to compliment the funky notes of Paranubes Oaxacan Rum, herbaceous honey-thyme flavor of Vecchio Amaro del Capo, and lemon.

Lefenfeld also didn’t have to go far to find the base for Coach Bombay’s Flying V, in which liquid from the duck confit dish at sister restaurant La Cuchara is added to room temperature cognac to create a salty counterpoint to chocolate-flavored mole bitters.

Taking more inspiration from La Cuchara, Lefenfeld uses huckleberries from the Pacific Northwest (the same region where his brother and chef, Ben, gets mushrooms imported) for another colorful, spring cocktail aptly named Mmm That Sounds Good. A mix of rye, dry curaçao, and lemon—topped with a violet-colored huckleberry espuma—is an addictive, easy sipper that is sure to be a popular spring addition.

“While we always try to be fun and playful, we also make sure these drinks are affordable, functional, and can be made quickly,” Lefenfeld says. “Visuals are important, but it's those things are what keep people coming back.”

It’s too early to stow away the puffy coats and wooly socks, but there are signs of spring around the corner. The days are longer, the sun climbs higher, and our constant cravings for hearty roasts and heavy red wine are showing definite signs of weakening. Here are three delightful beverages we think are great to usher in a vernal thaw.

This one isn’t too heavy, though, making it an ideal match for spring roasts of lamb, as well as heartier wintry fare.

While it may not quite be time to break out the lawn chairs and a gin and tonic, you can still work a little of that hallmark juniper flavor into a cool cocktail. Boomsa Oude Genever is barrel-aged, lending weight and color to this traditionally light liquid. Work it into your favorite gin drink for a slightly more rounded, cool-weather twist.

This fuller-figured IPA out of Pennsylvania can help bridge the gap. It boasts lovely high-toned notes of pine and citrus that remind us of spring, but that 8.3-percent ABV is still there to fortify you, should you need to shovel one more time—it is March in Baltimore, after all.

Thatcher’s Cucumber Liqueur
($21, Prestige Beverage Group)

The cool cucumber and light melon notes of this refreshing, faintly sweet concoction are the epitome of spring. While it is delightful on the rocks, it really shines as a cocktail enhancer. It’s the sort of beverage you didn’t know you needed until you check out the cocktail recipes and find yourself muttering, “Oh, I want to try that. And that! And that. . . .” Don’t deny yourself! Plop a bottle in the fridge and look for reasons to indulge.

Frog’s Leap
Chardonnay 2014
($33, Bacchus Importers)

Founder John Williams has long championed organic grape-growing in California, but that isn’t the point of the wines; they’re simply delicious. (The fact that they are also certified organically grown is a mere bonus.) The 2014 Chardonnay is a well-balanced beauty offering notes of pear and peach, lemon, and toasted nuts, but without overt sweetness and unfettered by heavy oak influence. It’s perfect for the patio but also a serious wine that will elevate any meal.

Le Brun Brut Cidre
($11, The
Country Vintner)

The artisan producers
of apple cider in Northern France are serious about their craft. This Brittany cider snaps with apple
flavors nestled in a pillow
of brioche undertones.
It’s sweet enough to balance its acidity; beer and wine fans rejoice, but devotees of sweet American cider and scrumpy
should move along. Word to the wise: Even if you love apples, you wouldn’t want to snack on the ones used in hard-cider production. These heirloom varieties have elevated acidity and tannins.

We’ve all experienced that moment of panic when we realize spring is here and we have done absolutely nothing to get our bodies ready. Whether blowing the dust off our cute sandals and realizing we need a pedicure or trying on that short dress and wishing we had gotten a spray tan, the time is now to take some action. We’ve compiled a list of some of our favorite salons, spas, and studios to take care of those warm weather needs.

About Faces Day Spa
We are all ready to shed the stress of the winter months and the anti-stress facial at About Faces is meant for just that. Intended to “restore the balance of mind and body,” this hour-long treatment also includes a massage of the back, face, and hands to aide in complete stress relief. Also debuting this spring is a new body contouring treatment that involves a waterless scrub and firming massage that leaves the skin toned and smooth. 1501 S. Clinton St. 410-675-0099

Elizabeth Jacob Spa & Salon
Treat yourself to a full day of Nirvana with a head-to-toe recharge for the summer. Enjoy an aromatherapy facial and massage along with a salt scrub, main/pedi, and shampoo and style. If that isn’t enough to get you feeling right, add on a wax service to complete a day of bliss. 18821 Frederick Rd., Parkton 410-357-0833

FX Studios
Men, we know you’ve been hitting the gym to get summer abs, but there’s more to getting beach ready than just ripped muscles. Relax in a private room watching ESPN while receiving a deluxe mani/pedi. Along with a basic shaping and cuticle cleansing, the service also includes an arm and hand massage, and exfoliation for added hydration. If nail care isn’t your thing, the spa is currently offering a “Spring Escape” package that includes a facial and massage. Multiple locations, including 11270 Pepper Rd., Hunt Valley. 410-771-1500

K.Co Design Salon & Day Spa
If spending hours baking on the beach or lying in a tanning bed isn’t your idea of getting that “fresh off the beach glow,” K.Co has a special for you. Receive $5 off a Norvell spray tan. This UV-free, vegan, paraben-free, and gluten-free tan allows you to have the perfect sun kissed glow without any damage to your skin. 6080 Falls Rd. 410-377-7727

Ojas Wellness Center
Sometimes we need a little more than a basic massage to recharge. At Ojas, all massages include aromatherapy, warm stones, and hot towels. If you want to step it up a notch, the spa offers a cupping massage designed to grab hold of your deepest muscles to release toxins and stimulate circulation. You may sport a few circular bruises afterwards like Michael Phelps, but it fades within a few days leaving you refreshed. Multiple locations, including 1501 Sulgrave Ave., Ste. 103. 410-664-6527

Red Door Spa
Treat yourself to luxury pampering with big plush robes, fruit-infused water, and soothing ambiance. Red Door Spa offers a multitude of massage, body, and facial treatments to choose from. In case you are interested in ridding your body of unwanted hair, the spa also offers face and body waxing including: bikini, legs, arms, back, and chest. The Village of Cross Keys, 42 Village Sq. 410-323-3636

Salon by Debbie
Treat yourself to a mock trip to the tropics with the spa package of the same name at any of the three locations under Salon by Debbie. Experience raindrop therapy, a form of aromatherapy treatment that involves dropping essential oils along your spine—like raindrops—followed by a back massage and warm towels. You’ll conclude your simulated tropical vacation with a mango butter pedicure that leaves your feet feeling baby soft. Multiple locations, including Spa on the Avenue, 8165 Honeygo Blvd., White Marsh. 410-931-1130

Spa at Four Seasons Baltimore
Immerse yourself in total extravagance at this haven housed in the Four Seasons Baltimore hotel. The spa menu includes nine types of massages, body treatments, facials, waxing, and nail services. Complimentary perks with every spa treatment include access to relaxation rooms, steam room, sauna, and the illustrious infinity pool that overlooks the Inner Harbor. 200 International Dr. 410-576-5800

Studio 921
Freshen up your hair color with some new highlights or go for a bold new all over color to embrace the warmer weather. Deep conditioning treatments are also offered (and necessary) to liven up your dull hair. Once your hair is taken care of, indulge in a hydrating facial or 921 essential manicure to jump-start the summer season. 921 E. Fort Ave., Ste. 108. 410-783-7727

“The ‘water year’ begins October 1. That’s when water use drops after the periods of higher use from late spring through summer, meaning precipitation can go toward replenishing the water supply,” explains Jay Apperson, the deputy director of communications for MDE. “Snow that gradually melts into the ground is particularly good for recharging groundwater.” The Baltimore region has recorded 5.79 inches of precipitation thus far in 2017, 2.07 inches fewer than average. The drought warning triggers more frequent testing and evaluation by the MDE, and Maryland Secretary of the Environment Ben Grumbles says, “Water conservation and efficiency are always smart—especially during extended periods of reduced rainfall.”

With warmer weather comes the addition of refreshing, lighter mixed drinks on cocktail menus around town. And some of the most creative examples can be found at B&O American Brasserie in Hotel Monaco.

I attended a media tasting last week, where bar manager Brendan Dorr presented some his new cocktails. Fittingly, we started out with Morning Dew ($10), a mix of Tanqueray No. Ten gin, St. Germain Elderflower Liqueur, lemon, cucumber water, and mint. This was a bright cocktail, with the lemon bringing out the citrus-y notes from the gin. The cucumber and mint added an extra fresh quality, making this a perfect outside sipper.

No spring cocktail list would be complete without a little tequila and the Burro Mexicano ($10) certainly packed a punch with Milagro tequila, Peloton de la Muerte Mezcal, lime, ginger syrup, and ginger beer. Up front, the cocktail tasted smoky from the mezcal, but the spice and tart flavors started to cut through and balance it out—resulting in a complex and tasty tequila drink.

The highlight came in the form of the E.M.H. Daiquiri ($10), a tribute to Ernest Hemingway’s days in Cuba with Appleton rum, grapefruit gastrique, lime, and Maraschino liqueur. Maybe it’s my recent bias for grapefruit cocktails, but I thought this drink hit every note perfectly: the sweet, brown-sugar flavor of the rum, tang from the grapefruit, and the bitter quality of the Maraschino, with a hint of citrus from the lime. We can see why this drink’s inspiration was Hemingway’s favorite cocktail.

In addition to the cocktail list, B&O is also featuring many new spring dishes including innovative salads, bone marrow, scallops, and a zucchini “crab cake” (you’ll just have to try it.)

An ideal time to visit is during the restaurant’s happy hour, 4:30-6:30 p.m. Monday through Friday, which features $3 draft beer, $4 house wine, and $5 cocktail of the day, as well as “6 for $6″—a selection of six small plates from the kitchen.

Maybe I’m being a little wistful and all of this damp weather has me craving warm temperatures, but I wanted to do a roundup of the best places with outside seating to have a drink. So, you know, when it actually, eventually does get warm we can enjoy them:

Have a Resurrection Ale at…Annabel Lee Tavern. Starting this year, the beloved Edgar Allan Poe-themed tavern will introduce outside seating. This is a huge relief for regulars who are used to at least hour-long waits Thursday-Saturday evenings. Plus, this has to be the only place where you can (legally) enjoy this Abbey-style dubbel ale outside. Something tells me the outside tables will fill up just as fast.

Have a mojito at…Little Havana. Though this Cuban-inspired bar and restaurant has been facing some controversy as of late, you can still enjoy their waterfront deck for now. And nothing’s more satisfying on a hot day than their mojito (rum, mint, lime juice, sugar, and soda water) over ice.

Have a margarita at…Arcos Restaurant. When a friend and I went first went to Arcos the week that it opened in 2005, we couldn’t believe the back patio. The brick-paved space, complete with mesquite grill, made us feel like we were in a legitimate Mexican grotto. So when you’re itching for a tequila-based drink, this is definitely the spot.

Have a pitcher of beer at…L.P. Steamers. This South Baltimore crab house is known just as much for its inexpensive, heavy crabs as for its rooftop deck. As you enjoy the ultimate combination of Maryland blue crabs and a pitcher of one of the domestics they have on tap, you can also take in a panoramic view of the city.

Have a daiquiri at…Woody’s Rum Bar. This Caribbean-themed establishment on the third floor above Slainte is opening this weekend. While sipping a strawberry daiquiri or piña colada, you can look out onto busy Thames Street (always good for people watching) or take in a sunset over the Harbor (pictured).

Have sangria at…Tapas Teatro. This small plates restaurant that is a usual hangout for Charles Theatre patrons introduces something incredible Memorial Day weekend: their white sangria. A wine punch native to Spain and Portugal, sangria is typically made with red wine, but the white version can be very refreshing. Especially while sitting at one of their sidewalk tables watching the theater crowd go by.

Have a thai lemonade at…Three. You don’t see this drink (made with coriander, lime, almond syrup, and ginger beer) on most menus in town. Traditionally it’s nonalcoholic, but this version is mighty tricky. While sitting at one of the sidewalk tables looking across the street to the action in Patterson Park, you won’t even realize how many of these crisp, cool drinks you’re putting away. Until you stand up.

What’s your favorite Baltimore restaurant/bar to sit and enjoy a cool one in the warm weather?
