			<p>Time was, a Russian immigrant named Samuel “Sacha” Specter made marmalade out of his rowhome at 601 S. Smallwood Street in Southwest Baltimore. And though some of the details are lost to history, what’s for certain is that every Easter, he went from making marmalade to creating sweet treats in the form of chocolate eggs for the kids in his neighborhood.</p>
<p>In 1948, realizing he was on to something, he and his friend Harry Gerwig founded <a href="https://www.marysue.com/">Mary Sue Candies</a>, naming the business after Gerwig’s daughters (both of whom became nuns).</p>
<p>“Out of a rowhouse, they made these buttercreams,” says Bill Buppert, president of Ruxton Chocolates, which purchased Mary Sue from the Specter family in 2001. “And as the business grew, they took over the house next to them and made them out of that basement. Pretty soon, they were making the eggs out of four or five basements—and they’re the very same ones we make today.”</p>
<p>Sadly, Gerwig passed away only a year after the company’s founding, so he never got to see it truly flourish. But the legacy lives on. As Mary Sue celebrates its 75th anniversary this year, other than the company’s location, very little has changed.</p>
<p>Between January 1 and February 15, Mary Sue makes millions of eggs by hand, melting the ingredients in copper pots. Through the years, ever-faithful fans have written love letters about the famous foil-wrapped candy and sent them to the company from far and wide.</p>
<p>“We don’t put our street address on our packaging,” says Buppert. “It’s the city, state, and ZIP code. Still, we get mail addressed to ‘Mary Sue Candies, Baltimore, MD, 21220,’ so the post office always seems to find us. It’s like sending a letter to Santa at the North Pole.”</p>

			<p>We’ve all been doing a lot of cooking lately. So why not celebrate the spring holidays by giving yourself a break from the kitchen prep and cleanup? (And relish the opportunity to support local restaurants, while you’re at it.) Though family celebrations will undoubtedly be a bit different this year, there are plenty of spots whipping up holiday dishes that maintain tradition. Here are some of the local options to choose from: </p>
<p><strong><a href="https://www.baltimorechefshop.com/makeathome-kits" target="_blank" rel="noreferrer noopener">Baltimore Chef Shop</a>:</strong> Continuing its take-home dinners, this Hampden cooking school is offering an Easter package featuring baked ham, scalloped potatoes, green beans, and lemon pound cake. The dinner serves two people, and orders need to be placed by 8 p.m. the night before pickup. They can be placed on the school’s <a href="https://www.baltimorechefshop.com/makeathome-kits" target="_blank" rel="noreferrer noopener">website</a> and picked up on Saturday and Sunday from 3-5 p.m. Customers can add on the hot cross buns make-at-home kit for another traditional Easter recipe. A portion of all proceeds will be donated this week to support <a href="https://www.hopkinsmedicine.org/support/" target="_blank" rel="noreferrer noopener">Johns Hopkins hospitals</a>.</p>
<p><strong><a href="https://www.thecharmery.com/" target="_blank" rel="noreferrer noopener">The Charmery</a></strong>: The Charmery in Hampden and Towson will be celebrating both holidays with “Easter Egg” ice cream pies and pints, and pints of its signature “Matzah Brittle” flavor for Passover. Pies are priced at $30 and pints at $10, with $1 from each item purchased set aside to benefit employees.</p>
<p><strong><a href="http://www.corner-pantry.com/passover--easter.html" target="_blank" rel="noreferrer noopener">The Corner Pantry</a>:</strong> Mt. Washington favorite The Corner Pantry is offering a variety of Easter and Passover staples for curbside pickup or carryout. The full menu can be seen on its website, with items including grilled lamb chops, boulangere potatoes, deviled eggs, and hot cross buns. Options are subject to change based on availability. Orders can be placed online and picked up either at The Corner Pantry between 9 a.m. and 3 p.m. or at The French Paradox in Stevenson Village between 3 p.m. and 8 p.m.</p>
<p><strong><a href="https://www.instagram.com/fsbaltimore/" target="_blank" rel="noreferrer noopener">Four Seasons Hotel</a>:</strong> The Four Seasons Hotel will be celebrating Easter with a brunch takeout menu. Customers can choose their choice of an appetizer, salad, entre, side, and dessert to enjoy. A few featured menu items include crab deviled eggs, honey glazed ham, and whipped mashed potatoes. Orders can be called in at 410-223-1366, and are taken daily from 7 a.m. to 11 p.m. All orders must be placed by 11 p.m. on April 11, and curbside pickup is between 11 a.m. and 2 p.m. on April 12 at the front drive. Brunch is $89 for two, $149 for four, and $189 for six. The best part? For every meal purchased, the Four Seasons will provide a complimentary Easter meal to a Baltimore first responder.</p>
<p><strong><a href="https://www.gourmetgirlsmd.com/" target="_blank" rel="noreferrer noopener">The Gourmet Girls:</a> </strong>Celebrate with this Owings Mills cafe and caterer, which has you covered for both holidays. Passover specials include &#8220;Seder Containters&#8221; that can be customized with options including roasted chicken, roasted brisket, matzo ball soup, Passover rolls, and chocolate-dipped macaroons. For Easter, indulge in turkey, ham, salads, desserts, and all the fixins&#8217;. Carryout orders can be placed by calling 410-581-4914. </p>
<p><strong><a href="https://www.lacucharabaltimore.com/" target="_blank" rel="noreferrer noopener">La Cuchara</a></strong>: La Cuchara is making Easter easy with its special Easter experience meal. With a two-person minimum, diners can enjoy deviled eggs, mashed potatoes, green beans, sweet potatoes, artisan bread, braised lamb shoulder, and coconut cake for $49 per person. Customers can also add a bottle of wine from the restaurant’s extensive list to the order. Orders must be placed at least 48 hours in advance, and picked up on Saturday, April 11 between 3 and 5 p.m. To place an order, the staff asks that you <a href="mailto:info@lacucharabaltimore.com">email</a> and indicate the size of your party, payment method, and any dietary restrictions.</p>
<p><strong><a href="http://www.lennysdeli.com/" target="_blank" rel="noreferrer noopener">Lenny&#8217;s Deli:</a> </strong>In addition to its full menu, this Owings Mills institution is offering Passover specialties including homemade chopped liver, matzo ball soup, roasted chicken, and brisket with brown gravy. Order at least 24 hours in advance by calling 410-363-3353.</p>
<p><strong><a href="https://www.ortobaltimore.com/" target="_blank" rel="noreferrer noopener">Orto</a>:</strong> This Station North hotspot is celebrating Passover with cookies that are available for preorder for the holiday. The coconut macaroons and amaretti cookies with salted caramel buttercream are available in orders of 12 per type for $15. Cookie carryout begins at 3 p.m. on April 8 and orders can be placed via <a href="mailto:reservations@ortobaltimore.com">email</a>. Orto will also be offering Easter dinner family packs for 2 to 10 people, in addition to its regular carryout menu. 			<p>Ever wonder why children collect chocolate inside plastic eggs on Easter? Or the roots behind the roasted meats on the holiday table? In the Roman Catholic faith, similar to many other sectors of spirituality, every food tells a story.</p>
<p>“For Italians, it’s always all about the food,” says Mary Ann Cricchio, owner of <a href="http://damimmo.com" target="_blank" rel="noreferrer noopener">Da Mimmo Restaurant</a> in Little Italy. “We eat when we’re happy, we eat when we’re sad. We eat all the time. And Easter is right there with Christmas, it’s a day for the family to be together around the table.”</p>
<p>The restaurant, and its surrounding community, is commemorating the Holy Week leading up to Easter Sunday with special programs at <a href="https://saintleorcc.com" target="_blank" rel="noreferrer noopener">St. Leo’s Church</a> and, of course, traditional holiday cuisine. Arguably the most important for Italians is the Easter lamb, which symbolizes the Lamb of God.</p>
<p>“Some people serve ham, but in Italian households the entree on the table is always lamb,” Cricchio says. “Easter Sunday is traditionally a big meat day because we haven’t eaten meat on any Friday during Lent leading up to it, especially on Good Friday.”</p>
<p>For Easter Sunday at Da Mimmo, chef Masood Masoodi prepares lamb from Southern Australia—which he marinates with garlic, rosemary, and sage for 12-15 hours. Then he grills the meat over an open fire and tops it with a sauce made from the leftover juices, flour, butter, onion, brandy, sherry, and red wine. He serves the holiday dish alongside green vegetables like Brussels sprouts or broccoli rabe.</p>
<p>“In Italy, colors have a lot of significance,” says Rosalinda Mannetta, a longtime instructor at Little Italy’s <a href="http://pandolalearningcenter.org" target="_blank" rel="noreferrer noopener">Pandola Learning Center</a>. “Green means hope. I remember on Easter Monday, or <em>Pasquetta,</em> my mother would make these beautiful <em>frittatas</em> with asparagus. The green represents the hope of spring.”</p>
<p>Bread is another important part of the Italian Easter meal. Mannetta—who grew up in Little Italy but lived with her family in Sardinia for many years—explains that all of the regions in Italy make their own types of Easter bread. Her family, for example, makes a braided bread similar to a Jewish <em>challah, </em>which can be flavored with lemon or Mediterranean anise seeds. Growing up, she also remembers making hundreds of traditional ricotta pies for the holiday. Some of which were sweet, and others were filled with savory ingredients like salami and cheese.</p>
<p>“From small town to small town, there are so many different variations,” Mannetta says. “As children, we would exchange breads with neighbors from different regions. We would take one of theirs and give one of ours. They were all different variations on one delicious theme.”</p>
<p>An Italian bread that Cricchio enjoys most is the classic <em>C</em><em>olomba di Pasqua</em>—a sweet loaf baked in the shape of a dove to represent the Holy Spirit. Similar to Christmas <em>panettone, </em>the bread is typically filled with nuts and dried fruit.</p>
<p>When it comes to sweets, Cricchio also likes to celebrate with <em>U</em><em>ova di Pasqua</em>—large decorative chocolate eggs that typically come with a special trinket or toy inside for children. The chocolate iterations, which symbolize rebirth and renewal for the holiday, became popular throughout Europe at the end of the 19th century. Though Cricchio used to have to carefully transport the eggs back from Italy, she recently found an American distributor that has the desserts imported, and now accepts orders for them at Da Mimmo. </p>
<p>“Italians are very strong in their faith,” she says. “And the food is a celebration of that. It’s really what Easter is all about.”</p>
<p>To continue Da Mimmo’s Easter traditions, Cricchio and Masoodi—who habitually take groups on <a href="http://www.baltimoremagazine.com/2016/3/3/da-mimmo-restaurant-owners-host-italy-travel-tours" target="_blank" rel="noreferrer noopener">summer tours of the Amalfi Coast</a>—are in the midst of planning a special trip to the city of Ravello next year, where performers reenact the story of the holiday in the streets during Holy Week.</p>
<p>But, for Italians, the spirit of the holiday transcends merely one week out of the year.</p>
<p>“I was brought up on proverbs,” Mannetta says with a laugh. “And in Italian there’s a saying that goes, ‘<em>Felice come una pasqua</em>’ which means, ‘Happy as Easter.’ So no matter what time of year, if you see someone that is very happy, you say ‘<em>Felice come una pasqua.</em>’ It’s a very joyous time.”</p>
